  • 2 tablespoons extra virgin olive oil
  • 4 cups thinly sliced onions
  • 6 medium-small Yukon gold potatoes (about 1 1/2 pounds), peeled and thinly sliced
  • 3/4 cup grated Gruyere cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 teaspoon butter (for greasing)
  • 1/3 cup stock (chicken, beef, or vegetable)
  • 1 teaspoon finely minced fresh rosemary

Instructions

  1. Preheat your oven to 400°F.
  2. In a sauté pan, heat 1 tablespoon of olive oil over medium-high heat. Add sliced onions and cook for about 15–20 minutes until golden brown.
  3. In a large bowl, toss the sliced potatoes with the remaining olive oil, half of the Gruyere cheese, Parmesan cheese, salt, and white pepper.
  4. Grease a gratin dish with butter. Layer the caramelized onions at the bottom and arrange the potato mixture on top. Pour stock over everything and sprinkle with remaining Gruyere cheese.
  5. Cover with foil and bake for 50 minutes until fork-tender. Remove foil and broil for an additional 5 minutes until bubbly and golden. Garnish with minced rosemary before serving.
