Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes (optional, for extra spice)
  • 2 cups cooked white or brown rice (or quinoa, cauliflower rice, etc.)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped cilantro (optional)
  • Pickled ginger
  • Nori strips (seaweed)
  • Chopped peanuts or cashews
  • Extra sriracha or soy sauce for drizzling

Instructions

  1. In a medium bowl, combine soy sauce, olive oil, honey (or maple syrup), garlic powder, smoked paprika, black pepper, and red pepper flakes if you're feeling spicy! Add the shrimp and let them marinate while you prepare everything else.
  2. In another small bowl, mix together mayonnaise (or Greek yogurt), sriracha, lime juice, and soy sauce. Adjust the sriracha according to how spicy you like it.
  3. Heat a skillet over medium-high heat. Once hot, add marinated shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque.
  4. Start with a base of rice (or your chosen alternative). Top it with cooked shrimp and pile on all those lovely fresh veggies: shredded carrots, cucumbers, radishes, and more.
  5. Finish off your bowls with slices of avocado, green onions, sesame seeds, cilantro if you're using it, plus any extras such as pickled ginger or chopped nuts. Serve immediately.
