  • 34 lbs beef chuck roast
  • 2 cups salsa (mild, medium, or spicy)
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 1 tbsp chili powder
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck roast and pat dry. Season generously with salt and pepper.
  2. In a skillet over medium heat, sauté the chopped onion and minced garlic until golden (about 5 minutes).
  3. Transfer the onion and garlic to the slow cooker. Place the seasoned beef on top and pour salsa over everything. Sprinkle cumin and chili powder on top.
  4. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  5. Shred the beef right in the slow cooker using two forks, mixing it with the salsa before serving.
