  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and chop cucumbers in half, then gently smash each half before cutting into 1-inch pieces.
  2. Dice the avocado and add it to the bowl with smashed cucumbers.
  3. Mix in crumbled feta, chopped pistachios, dill, and chives.
  4. For the dressing, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
