  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup almond milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Boil the sweet potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot.
  2. Add olive oil, almond milk, vanilla extract, cinnamon, nutmeg, and butter to the sweet potatoes. Mash until smooth.
  3. Stir in brown sugar, maple syrup, additional spices, soaked raisins, vegan marshmallows, and half of the pecans.
  4. Transfer the mixture into a greased baking dish. Top with remaining pecans and an extra drizzle of maple syrup.
  5. Bake for about 60 minutes until bubbly and golden brown. Allow to cool slightly before serving.
