500g ground beef
200g spaghetti
6 crusty white rolls
240ml beef stock
500g tomato passata
100g butter
200g mozzarella cheese
1 medium white onion, finely diced
2 garlic cloves, finely diced
1 tablespoon tomato puree
80ml apple vinegar
½ tablespoon Worcestershire sauce
½ bunch fresh basil, chopped
½ teaspoon dried oregano
½ teaspoon sugar
20g freshly grated parmesan
30g parmesan for butter
1 tablespoon fresh parsley, finely chopped
3 garlic cloves, made into paste
Instructions
Prepare the sauce by sautéing diced onion and garlic in olive oil, then browning ground beef. Add tomato passata, beef stock, and seasonings; simmer for about 25 minutes.
While the sauce simmers, hollow out crusty rolls and brush them with a mixture of melted butter, garlic paste, parsley, and parmesan.
Cook spaghetti until al dente; mix it with the sauce once ready.
Fill each hollowed roll with the spaghetti mixture and top generously with shredded mozzarella.
Bake at 350°F (175°C) for 8–10 minutes until golden brown and crispy.
