  • 1 Whole chicken
  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into ½" medallions)

Instructions

  1. Prepare the chicken by cutting along both sides of the backbone. Flatten it by pressing down firmly.
  2. Drizzle grapeseed oil over the chicken and apply seasoning generously, massaging it into the meat.
  3. Insert butter and remaining seasoning under the skin of the breasts for added moisture.
  4. Place sliced onions in a cast iron skillet as a bed for the chicken and position the bird on top.
  5. Roast in a preheated oven at 375°F for about 1 hour and 15 minutes, basting every 15 minutes until cooked through.
