  • 1 green onion (finely sliced)
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes
  • Sesame seeds for garnish

Instructions

  1. Wash and dry the cucumbers. Trim the ends, then slice them diagonally using chopsticks to create accordion-like spirals.
