  • 1 kg carrots, peeled and sliced
  • 1 medium onion, cut into eighths
  • 4 cloves garlic, smashed
  • 3 cm fresh ginger, thinly sliced
  • 1 red chili, roughly chopped
  • 3 tbsp miso paste
  • 1.6 L vegetable stock
  • Vegetable oil for roasting
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (180°C fan).
  2. Peel and slice the carrots; save the peels.
  3. In a roasting tin, toss carrot peels with salt, pepper, and vegetable oil; roast for about 10 minutes until crisp.
  4. In a large roasting tin, combine carrots, onion, garlic, ginger, and chili; season and roast for around 35 minutes until tender.
  5. While roasting, prepare chili ginger oil by heating vegetable oil with sliced ginger and chili in a small saucepan until fragrant; mix in seeds.
  6. Transfer roasted vegetables to a blender with miso paste and vegetable stock; blend until smooth.
  7. Simmer blended soup in a saucepan for 5 minutes; adjust seasoning as needed.
  8. Serve warm topped with crispy carrot peels and chili ginger oil.
