Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup whole milk, lukewarm
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon sugar (optional)
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 12 tablespoons whole milk, as needed for consistency
  • Pinch of salt

Instructions

  1. Activate the yeast by combining lukewarm milk and active dry yeast in a bowl; let sit until frothy.
  2. In a large bowl, mix flour, sugar, and salt. Create a well in the center, then add yeast mixture, softened butter, egg, and vanilla. Mix until combined.
  3. Knead the dough on a floured surface until smooth and elastic. Let rise in a greased bowl for about 1–1.5 hours until doubled.
  4. Prepare the cheesecake filling by beating softened cream cheese with sugar, vanilla extract, flour, and sour cream (or Greek yogurt) until creamy.
  5. Roll out the dough into a rectangle and spread softened butter evenly over it. Top with cheesecake filling and sprinkle cinnamon-sugar mixture over.
  6. Roll tightly into a log shape, cut into rolls, and place in a greased baking dish. Let rise again for 30 minutes.
  7. Bake in a preheated oven at 350°F (175°C) for 25–30 minutes until golden brown.
  8. Cool slightly before drizzling with icing made from cream cheese, powdered sugar, milk, and salt.
