  • 1 lb vanilla cream cookies
  • 6 tablespoons melted butter
  • 1 small box (3.3 oz) vegan gelatin
  • 1 cup boiling water
  • 16 oz softened cream cheese
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 10 strawberry wafer cookies

Instructions

  1. For the crust, crush 26 vanilla cream cookies into fine crumbs and mix with melted butter. Press into a greased 10" springform pan and freeze for 15 minutes.
  2. Combine boiling water and vegan gelatin in a bowl until dissolved; let cool.
  3. In another bowl, beat softened cream cheese with granulated sugar until smooth.
  4. Whip heavy cream with powdered sugar until stiff peaks form; divide in half.
  5. Mix half of the whipped cream into the cream cheese mixture and the other half into the cooled gelatin mixture.
  6. Pour half of the strawberry mixture over the crust; freeze for another 15 minutes. Add cream cheese mixture, then top with remaining strawberry mixture.
  7. Crush remaining cookies and sprinkle on top. Chill for at least 4 hours before serving.
