  • 3 large eggs (for filling)
  • 2 tbsp unsalted butter (melted for filling)
  • 0.5 cup all-purpose flour (for topping)
  • 0.5 cup granulated sugar (for topping)
  • 0.25 cup unsalted butter (cold and cut into small pieces)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream softened butter with sugars until fluffy. Add one egg and vanilla, then mix in flour and baking powder until combined.
  3. Press half of the cookie dough into a greased 9×13 inch baking pan.
  4. Whisk together lemon juice, sugar, flour, salt, eggs, and melted butter in another bowl until smooth.
  5. Pour the lemonade filling over the cookie base evenly.
  6. For the crumble topping, combine flour, sugar, and cold butter pieces until crumbly; sprinkle over the filling.
  7. Bake for 40-45 minutes or until golden brown and set in the middle.
  8. Cool completely before slicing into squares.
