  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Salsa for topping
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional fresh cilantro and lime wedges for garnish

Instructions

  1. Rinse the uncooked rice under cool water. In a medium saucepan, combine rice and chicken broth; bring to a boil. Reduce heat to low, cover, and simmer until liquid is absorbed (15-20 minutes).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef or turkey; cook until browned. Stir in taco seasoning and a splash of water if needed.
  3. Assemble bowls by layering rice, seasoned meat, black beans, corn, diced tomatoes, shredded lettuce, cheese, and salsa.
  4. Garnish with fresh cilantro or lime wedges before serving.
