  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 3 cups old-fashioned whole oats
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon salt
  • 1 generous cup chopped peeled apple
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together milk, eggs, maple syrup, applesauce, and vanilla essence until combined.
  3. In another bowl, mix oats, baking powder, cinnamon powder, nutmeg powder, and salt.
  4. Gently fold dry ingredients into wet mixture until just combined.
  5. Fold in chopped apples (and nuts if using).
  6. Spoon mixture into greased muffin tin, filling each cup three-quarters full.
  7. Bake for about 28 minutes or until golden brown.
  8. Let cool slightly before removing from pan.
