  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 1 medium white onion (chopped)
  • 3 jalapeño peppers (chopped)
  • 2 serrano peppers (chopped; optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water (plus more as needed)
  • 2 tablespoons masa harina (corn flour, for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan for about 1-2 minutes on each side until fragrant. Remove stems and seeds.
  2. Soak the toasted peppers in hot water for 20 minutes to soften.
  3. Blend the softened peppers with soaking water and salt until smooth to create a chili paste.
  4. Season the cubed beef with cumin, salt, and pepper.
  5. Sear the beef in a large pot until browned, then remove from pot.
  6. Sauté chopped onions and jalapeños in the same pot until softened. Add minced garlic and cook until fragrant.
  7. Return the beef to the pot; stir in the chili paste and cook for another few minutes.
  8. Pour in beef stock, add masa harina if using, brown sugar, and bring to a boil; reduce heat and simmer uncovered for at least 2 hours or until beef is tender.
