  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup chopped peanuts (or sunflower seeds)
  • 2 tablespoons sesame seeds
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. Cook according to package instructions. Fluff with a fork and let cool.
  2. In a large bowl, combine cooled quinoa with the diced bell pepper, cucumber, carrots, green onions, cilantro, peanuts (or sunflower seeds), and sesame seeds.
  3. In a small bowl, whisk together soy sauce, lime juice, honey (or maple syrup), sesame oil, ginger, garlic, salt, and pepper until smooth.
