  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup chopped parsley
  • Freshly ground black pepper

Instructions

  1. Peel, slice, and dice the pear, tossing it with lemon juice to prevent browning.
  2. In a large skillet over medium heat, cook turkey strips until golden brown. Remove and drain on paper towels.
  3. In the same skillet, add shallots and sauté until softened.
  4. Stir in peas and diced pears; cook for about five minutes until heated through.
  5. Turn off heat and fold in half of the turkey strips with parsley and black pepper.
  6. Serve in a bowl topped with remaining turkey strips and lemon zest.
