  • 15 oz can pinto beans (drained and rinsed)
  • 1 medium yellow onion, chopped
  • 3 tablespoons tomato paste
  • 1 ½ teaspoons garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional for a hotter chili)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Sauté the chopped onion for about 2 minutes until softened.
  2. Add ground beef; cook while breaking it up until browned (about 5 minutes). Drain excess fat.
  3. Stir in minced garlic and let it cook for 30 seconds before adding tomato paste and spices (cumin, chili powder, brown sugar, oregano, salt, black pepper).
  4. Pour in beef broth and fire-roasted tomatoes; mix in rinsed beans.
  5. Bring to a boil then reduce heat to simmer for 1-2 hours, stirring occasionally.
