  • 1820 ladyfingers (about 150g)
  • 8 oz mascarpone cheese, room temperature
  • 2 tablespoons strong espresso
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 10 oz white chocolate, melted (for coating)
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Crush the ladyfingers in a food processor until finely ground.
  2. In a bowl, mix mascarpone cheese, powdered sugar, espresso, and vanilla until smooth.
  3. Fold crushed ladyfingers into the mascarpone mixture until combined.
  4. Chill the mixture for 15-20 minutes to firm up.
  5. Roll into 1-inch balls and place on a parchment-lined tray.
  6. Refrigerate for another 30 minutes to set.
  7. Melt white chocolate and dip each truffle, allowing excess to drip off.
  8. Dust with cocoa powder before the chocolate sets completely.
  9. Chill again until the chocolate is firm.
