  • 14 oz firm tofu, drained and pressed
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt to taste
  • 4 small corn or flour tortillas
  • 1 ripe avocado, sliced
  • 2 tbsp fresh lime juice
  • Fresh cilantro for garnish

Instructions

  1. Cube the pressed tofu into bite-sized pieces for even cooking.
  2. In a bowl, mix cumin, chili powder, paprika, and salt. Coat the tofu cubes in the spice mixture.
  3. Heat oil in a nonstick skillet over medium heat. Cook the seasoned tofu until golden brown on all sides, about 10 minutes.
  4. Add rinsed black beans to the skillet and cook for another few minutes until heated through.
  5. Warm tortillas in another skillet or over an open flame until pliable.
  6. Assemble tacos by filling each tortilla with the tofu-black bean mixture and topping with avocado slices, cilantro, and lime juice.
