  • 125 ml fresh orange juice
  • 250 grams olive oil (or half olive oil half sunflower oil)
  • 50 grams honey
  • 80 ml water
  • 100 grams sugar
  • 1 + ½ teaspoons ground cinnamon
  • ½ teaspoon ground clove
  • ⅓ teaspoon ground nutmeg
  • ¼ teaspoon vanillin powder or ½ teaspoon vanilla extract
  • Zest of 1 orange
  • ½ teaspoon baking soda
  • 125 grams fine semolina
  • 550 grams all-purpose flour
  • 1 teaspoon baking powder
  • 400 grams sugar (for syrup)
  • 100 grams honey (for syrup)
  • 325 ml water (for syrup)
  • 1 stick of cinnamon (for syrup)
  • 45 dried cloves (for syrup)
  • Peel of 1 orange (for syrup)
  • Honey (for drizzling)
  • Ground walnuts (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F). In a large bowl, mix orange juice, olive oil, honey, water, sugar, and spices until well combined.
  2. Add baking soda, semolina, flour, and baking powder. Mix gently to form a soft dough.
  3. Shape into balls or ovals and place on a lined baking sheet.
  4. Bake for about 20 minutes or until lightly golden.
  5. Meanwhile, prepare the syrup by boiling water, sugar, honey, and spices until thickened.
  6. Soak warm cookies in syrup for a couple of minutes before garnishing with honey and ground walnuts.
