  • 5 ounces whole wheat French bread (cut into small cubes)
  • 2 tablespoons dried cranberries (chopped)
  • 3/4 cups chicken broth
  • 1/2 medium onion (minced)
  • Fresh sage leaves (minced)
  • 1 large egg (beaten)
  • Salt and pepper to taste

Instructions

  1. Prepare the stuffing by sautéing minced onion and celery in butter until soft. Combine with bread cubes, sage, parsley, poultry seasoning, beaten egg, cranberries, and chicken broth in a large bowl.
  2. Lay turkey breast skin-side down, sprinkle with salt, and spread stuffing evenly on top. Roll tightly into a log shape and secure with cooking twine.
  3. Preheat oven to 350°F (175°C) and sear the roulade in a skillet until golden brown on all sides. Then roast in the oven for about 60 minutes until fully cooked.
