  • 4 tbsp olive oil
  • 15 oz chickpeas, cooked, drained and rinsed
  • 1 tsp garam masala
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp turmeric
  • 1/4 tsp ground cloves
  • 1/4 tsp black pepper
  • 1 sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 red pepper, thinly sliced
  • 2 tbsp sun dried tomatoes in oil, finely chopped
  • 1 tbsp sumac
  • 1/2 tsp salt
  • 1 tbsp apple vinegar
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp vegan sugar, optional
  • 1 cup red cabbage, chopped
  • 1 cup cilantro, chopped
  • 56 fresh basil leaves, chopped
  • 2 tbsp fresh lemon juice

Instructions

  1. Sauté chickpeas in olive oil over medium heat for 5 minutes with spices until fragrant.
  2. In the same skillet, cook sliced onions and garlic until soft, then add red peppers and sun-dried tomatoes; stir for 2 more minutes.
  3. Combine chickpeas and vegetable mixture in a bowl, adding vinegar and remaining spices. Fold in cabbage, herbs, and lemon juice.
