  • 1 cup warm milk (about 110°F)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a small bowl, combine warm milk and active dry yeast. Let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together flour, sugar, and salt. Create a well in the center; add the frothy yeast mixture, eggs, melted butter, and vanilla extract. Stir until a sticky dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl and let it rise covered in a warm place for 1-1.5 hours or until doubled in size.
  5. Roll out the risen dough to about ½-inch thickness and cut into squares (2×2 inches).
  6. Heat vegetable oil in a deep pot to 350°F (175°C). Fry beignets in batches for 1-2 minutes on each side until golden brown.
  7. Remove beignets with a slotted spoon and place on paper towels to drain excess oil.
  8. Dust with powdered sugar while still warm and serve immediately.
