  • 1 ¾ cups apple juice
  • 2 tablespoons apple cider vinegar
  • ½ cup brown sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ⅛ teaspoon salt

Instructions

  1. Prepare the apples by coring and chopping them into large chunks. Combine the apple chunks with apple juice and apple cider vinegar in a large pot. Bring to a boil, then reduce heat and cover, simmering for about 30 minutes until soft.
  2. Stir in brown sugar, vanilla bean paste, cinnamon, nutmeg, cloves, and salt once the apples are tender.
  3. Blend the mixture until smooth using an immersion blender or transfer it to a standing blender.
  4. Return the blended mixture to the pot and cook uncovered over medium heat for another 30–45 minutes, stirring frequently until thickened.
  5. Serve warm on toast or use it as an ingredient in other recipes.
