Ingredients

  • 350 grams silken tofu
  • 34 tbsp smooth peanut butter
  • 34 tbsp agave syrup (or maple syrup/powdered sugar)
  • 1 tsp vanilla paste or extract
  • 100 grams dark chocolate (70% cocoa)
  • 400 grams full-fat coconut milk
  • Pinch of salt

Instructions

  1. In a blender, combine silken tofu, peanut butter, agave syrup, vanilla extract, and salt. Blend until smooth and creamy. Taste and adjust sweetness if needed.
  2. Spoon the mousse into individual ramekins or jars and refrigerate while preparing the ganache.
  3. Melt dark chocolate either in a microwave-safe bowl or using a double boiler. Stir in the creamy part of the coconut milk until well mixed.
  4. Pour the ganache over each mousse cup and return them to the fridge to set for at least one hour before serving.
