  • 3 tablespoons vegan butter
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 cup vegan butter (room temperature)
  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1.5 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water; let it sit for about 5 minutes until thickened.
  2. In a large bowl, cream together room temperature vegan butter, both sugars, and vanilla until creamy. Add the flax egg and mix well.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt before gradually adding it to the wet mixture until just combined.
  4. For the pecan filling, melt vegan butter with brown sugar, maple syrup, and chopped pecans in a small saucepan over low heat until gooey.
  5. Preheat your oven and roll cookie dough into balls; make an indentation in each for the filling.
  6. Spoon in the pecan filling and bake at 350°F (175°C) for about 12-14 minutes until golden.
