  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean kitchen towels for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes and coat each piece in cornstarch.
  3. Heat oil in a skillet over medium-high heat. Add tofu in a single layer without stirring for about 3-4 minutes until golden brown.
  4. Flip the tofu and cook until crispy all around before removing it from the skillet.
  5. In the same skillet, add sliced peppers and onion; cook for about five minutes until caramelized.
  6. Stir in minced garlic and ginger for about thirty seconds until fragrant.
  7. Add pineapple chunks and let caramelize for another two to three minutes.
  8. Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over vegetable mixture along with the crispy tofu. Stir gently for an additional two minutes until glossy.
