  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Instructions

  1. In a mixing bowl, whisk together melted coconut oil, pumpkin puree, brown sugar, and white sugar until well combined.
  2. Add all-purpose flour, pumpkin pie spice, salt, and baking soda. Mix until you have a smooth but slightly sticky dough. Gently fold in half of the chocolate chips.
  3. Cover the dough with plastic wrap and chill in the refrigerator for at least one hour (up to 24 hours for deeper flavor).
  4. Preheat your oven to 325°F (163°C) and line a baking tray with parchment paper.
  5. Scoop about 1.5 tablespoons of cookie dough onto the tray, leaving space between each scoop. Flatten slightly and add remaining chocolate chips on top.
  6. Bake for 12–14 minutes until golden around the edges but still soft in the center. Cool on the tray for a few minutes before transferring to a wire rack.
