  • 8 oz fresh mushrooms (baby bella or button), sliced
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 3 garlic cloves, minced

  • 1 cup celery, diced
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
