  • 1¼ cups whole milk
  • 1½ cups fresh or frozen raspberries
  • ½ cup sugar
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 23 tbsp milk
  • 1 tsp vanilla extract
  • Fresh raspberries for decoration
  • White chocolate curls or shavings for decoration
  • Mint leaves for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, followed by vanilla and melted white chocolate.
  3. Alternately add the flour mixture and milk to the butter mixture until just combined.
  4. Divide batter among prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
  5. For the raspberry filling, heat raspberries, sugar, and lemon juice until berries break down; thicken with cornstarch slurry and let cool.
  6. To make frosting, cream butter, gradually add powdered sugar, then mix in melted white chocolate and enough milk for desired consistency.
  7. Assemble the cake by layering with frosting and raspberry filling; decorate as desired.
