  • 1/4 cup Worcestershire sauce
  • 1/2 cup unsalted butter (1 stick)
  • 2 large sweet onions, sliced
  • 3 cups carrots, chopped (about 5 medium carrots)
  • 5 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast generously with salt and pepper. In a skillet, melt two tablespoons of butter over medium-high heat and sear the roast on all sides until browned (about five minutes per side).
  3. Remove the roast and sauté onions, carrots, and garlic in the same skillet until fragrant.
  4. Place the seared roast in an oven-safe pot or Dutch oven. Layer sautéed vegetables on top. Pour Worcestershire sauce and beef broth over everything and sprinkle with thyme.
